BLACKBERRY YOGURT CUPCAKES



Blackberry yogurt cake

1 small tub plain yogurt[135g]
120g caster sugar
3 eggs
70g ground almond
140g self raising flour
1/2 cup corn oil
1/2 cup of shredded white cooking chocolate
some frozen blackberry

Method
Pre heat oven to 180'c...grease and line a 20cm round pan with baking paper...mix yogurt, sugar, eggs, in a large bowl...add gound almond and flour...mix well...add oil and mix well...lastly add the shredded white chocolate till well combined...fill 2/3 of batter in the pan...arrange the blackberries on the batter and pour the rest of the remaining batter...bake for 40 to 50 min.

notes: sy taburkan snow powder atas kek.

EASY TIRAMISU

Pudding 200g
Sugar 2 tbsp
Cream milk 100g
Cream cheese 200g

Procedure:
2)Soften your cheese in your microwave for a minutes, then whip until it melts.
3)Add pudding in. Whip and stir.
4)Pour the cream and sugar then whip it up until everythin dissolved and mixed. This is the cream base of the tiramisu.

You will need a piece of chocolate cake for the cake base.
5)Prepare yourself a cup, place the cream base and cake in layers.
6)Freeze it in the fridge for 2 hours.
7)Lastly scatter some choco power on the firmed cream cake.

CREAM CHEESE FRUITCAKE


Cream Cheese Fruitcake[Bebop]

70g butter
70g cream cheese
70g brown sugar
80g all purpose flour[sy gunakan self raising flour]
2 biji telur
1 tsp orange paste
110g mix fruit[rendam dlm 2tbs orange juice]

Cara
Putar cream cheese, butter dan gula hingga kembang...masukan telur satu persatu...masukan orange paste....masukan tepung diselang selikan dgn mix fruit...bakar pada suhu 160'C selama 30-45min atau hingga masak.

BLUEBERRY CRUNCHIES


Blueberry Crunchies

225g butter
150g castor sugar
2 egg yolks
100g cornflakes [kisar agak halus]
275g flour ]ayak bersama cornflour
50g cornflour
blueberry filling or jam

Caranya

Kacau butter dan gula hingga lembut...masukan telur satu persatu hingga rata...masukan campuran tepung tadi gaul rata hingga menjadi doh lembut...bentuk doh menjadi bulat2 kecil...salutkan dengan cornflakes kisar...lubangkan ditengahnya dngn hujung jari...isikan blueberry filling di tengahnya...atur biskut ini jarak2 kerana biskut in akan mengembang...bakar dalam suhu 170'c selama 20 min atau sehingga masak.

Notes: adonan ini memang lembik jadi jngn tambah tepung.

SHEPHERD PIE



Shepherd pie inti black pepper n cheese.

Kentang{rebus sampai btl2 empuk}
sedikit mentega
susu skim milk
1 biji telur
lada putih
garam secukup rasa

Cara
Lenyekkan kentang...masukan mentega...gaul...kemudian masukan susu...gaul rata...lepas tu masukan telur...gaul rata dan masukan garam dan lada putih sedikit.

Inti daging black pepper
daging cincang 200g
1 biji bawang besar{dadu}
2 biji bawang putih(cincang}
1 biji besar tomato{dadu}
sedikit minyak
mixed vege
sos black pepper
sedikit tepung gandum
cheese slice

Cara
Panaskan minyak...masukan bawang putih dan bawang besar...tumis sekejap...masukan daging, masak hingga daging kering sedikit...masukan mixed vege...lepastu masukan black pepper sos...klu kurang rasa blh tambah garam dan lada putih...masukan tomato, gaul sekejap...masukan sedkit tepung gandum untuk mengering intinya...gaul rata...tutup api.

Cara melapis pie
Ambil loyang sapu sikit mentega...masukan separuh kentang tadi...kemudian bubuh inti daging...atur cheese atas daging...tutup dgn kentang separuh lagi...atas kentang sapu telur...blh pipekan cili sos dan mayonis jika suka...bakar.

BLUEBERRY N STRAWBERRY CHEESE TART


CHEESE TART

Dough
250g butter
120g castor sugar
1 'b' egg
100g ground almond
20g nestum
340g plain flour

Method,

1.Cream butter n sugar till light n fluffy.
2.Add the egg, mixed well.
3.Fold in the flour, then add the ground almond n nestum. Do not over mix.
4.Grease tart moulds.
5.Press the dough into the mould n cut the excess dough.
6.Prick the dough with a fork.
7.Bake on the preheated oven at 180'C for 10 to 15 min. Remove and set aside.

Filling.
250g cream cheese
60g castor sugar
20g butter
1 'b' egg

Method
1.Beat cream cheese, butter n sugar till light n fluffy.
2.Add the egg n beat till well mixed.
3.Spoon the the cheese filling into the cooked tart mould and put little bit of strawberry or blueberry in the centre of cheese filling.Then swirl the filling with a toothpick.
4.Bake the cheese tart for 10 to 15 min till well done.

PAVLOVA


PAVLOVA

3 egg whites
1 1/2 cups sugar
1 1/2 teaspoons vanilla
1 1/2 teaspoons vinegar
1 cup whipping cream
1/2 teaspoon vanilla
4 cups sliced fresh fruit, such as kiwi fruit, strawberries, bananas, peaches, pineapple chunks or fruits cocktail.

Directions:
Bring egg whites to room temperature. Line a baking sheet with foil. Using an 8x1 1/2 inch cake pan as a guidesdraw a circle on the foil. In a large mixer bowl combine egg whites, sugar, 1 1/2 teaspoons vanilla, vinegar, and 1/4 cup boiling water. Beat about 12 minutes, scrapping bawl constantly, till stiff peaks form and mixture holds shape. Spread egg white mixture over circle on foil. shape into shell with back of spoon, making the bottom 1/2 inch thick and the sides 2 1/2 to 3 inches high. Preheat oven to 450 degrees. Place baking sheet in center of oven and turn oven off. Let stand 4 to 5 hours. DO NOT OPEN OVEN DOOR!

Combine whipping cream and 1/2 teaspoon vanilla. Beat till soft peaks form. Remove meringue shell from foil; place on serving plate. Spread whipped cream in shell, reserving 1/2 cup for garnish. Arrange fruit in shell. Mound reserved whipped cream in center of fruit. Cut into wedges. Serve immediately. Makes 8 to 10 servings

KEK KUKUS PRUNE LEEN

Bahan-bahan:
250gm butter
2 cwn tepung naik sendiri
1 cwn gula caster
1/4 tin besar susu pekat manis
5 biji telur
20 biji buah prunes, diblend halus dgn 100ml air (Rinn guna Sunsweet pitted prunes)
5 biji buah prunes, dihiris kasar

Cara-cara:
1. Didihkan air dalam pengukus.
2. Putar butter, gula halus dan susu pekat hingga sebati.
3. Masukkan telur satu per satu.
4. Masukkan prunes yg dikisar halus.
5. Kaup balikkan tepung. Jangan terlebih putar.
6. Masukkan prunes yg dihiris kasar.
7. Gris loyang dengan sedikit butter dan alaskan dengan kertas greaseproof.
8. Tuangkan adunan dan letak beberapa biji prunes di atas adunan sebagai
hiasan.
9. Kukus selama 1 1/2jam.
** Balut tutup pengukus dengan kain supaya air tidak menitis ke atas kek.
10. Biarkan kek sejuk seketika sebelum dipotong.

CHOCOLATE MINT CUPCAKES



KEK COKELAT PUDINA[dari kotak tepung BLUEKEY]

tepung bersebuk penaik 'bluekey' 200g
mentega 230g
gula castor 220g
telur 5 biji [besar sederhana]
perasa vanilla 1/2 sudu teh
serbuk koko 30g
susu 50g
perwarna hijau secukupnya
perasa pudina [peppermint] 1 1/2 sudu teh

HIASAN

coklat untuk masakan 150g
cream segar 90g [1/3 cawan]
mentega 30g [2 sudu makan]
Madu 15g [2 sudu makan]

CARA-CARA

1.Panaskan oven pada suhu 180 degrees

2.Lapik dengan kertas minyak disekeliling acuan kek yang berbentuk bulat berukuran 20cm (8 in)

3.Kisar tepung berserbuk penaik 'Blue Key' yang telah diayak bersama mentega/marjerin supaya menjadi pes yang lembut.

4.Pukul telur dan gula sehingga kembang dan masukkan perasa vanila.Kemudian,dengan perlahan-lahan tuangkan aduan ini ke dalam pes tadi sambil dikacau hinggga menjadi lembut dan sebati.

5.Bahagikan aduan yang dipukul itu kepada dua bahagian.Campurkan serbuk koko dan susu kepada salah satu bahagian adunan.Kisar sehingga lembut.Kemudian,masukkan pewarna hijau dan perasa pudina ke dalam bahagian yang satu lagi.

6.Tuangkan kedua-dua bahagian silih berganti ke dalam acuan pembakar.

7.Masukkan ke dalam oven selama 45 hingga 50 minit.

8.Untuk menyediakan hiasan,masukkan kesemua bahan-bahan ke dalam mangkuk dan direndam air panas (atau gunakan kukus).kacau bahan-bahan itu perlahan-lahan selama 5-10 minit sehingga cair dan licin.Hiaskan bahagian atas dan di tepi kek dengan coklat yang panas itu.

COCONUT BLOSSOM


COCONUT BLOSSOM [Yochana]

3 nos. cold eggs
250 gm. sugar
10 ozs. (about 280 to 300 gm.) Softasilk flour or any superfine flour (Hong Kong flour)
2 1/2 tsp. baking powder
1 Tbsp. ovalette
130 gm. (5 ozs.) coconut cream (can buy the box coconut milk e.g. Kara)
30 gm. pandan juice (blend about 6 pandan leaves)
1 tsp. pandan paste

Method:

(1) Beat all the ingredients together until thick and fluffy.
(2) Scoop 1 Tbsp. of batter into madeleine mould (lined with paper cup), top up with 1 tbsp. of coconut filling and then another 1 Tbsp. of batter.
(3) Steam over high heat for 15 mins.

Coconut fillings:

250 gm. grated coconut
30 gm. castor sugar
100 gm. gula melaka
60 gm. water
1 tsp. cornflour
2 pcs. pandan leaves - cut into small pieces

Method:

(1) Cook sugar, gula melaka and water in a wok till sugar melts.
(2) Add in grated coconut and pandan leaves and fry till dry.
(3) Sprinkle cornflour on top and stir till well mixed.
(4) Cool before using.

HAVANA SPARKLES

50g coffee mate
50g icing sugar
60g nestum
50g cornflour
170g top flour
150g mentega
1/4 sudu teh garam
1/4 sudu teh vanilla
1 biji telur
secukup gajus dibakar
250g cookie chocolate
secukup gula-gula hundred thousand


Cara-Caranya:

- Gaul semua bahan hingga rata.Ambil sedikit adunan lalu masukkan sebiji gajus dan bulat-bulatkan.
- Bakar hingga masak selama 10-20 minit,oven 150'C, dan angkat,biarkan sejuk.
- Cooking chocolate (250g) dan 1 sudu makan minyak dicairkan dengan double boiling, angkat dan biarkan 5 minit.
- Celupkan dalam coklat,angkat dan masukkan dalam papercup serta taburkan gula-gula hundred thousand.

PINEAPPLE TART


PINEAPPLE TART

250g butter
350g flour
50g milk powder
20g icing sugar
1/2 tsp salt
2 eggs yolk

Method:
1. cream butter, icing sugar, milk powder n egg till light n fluffy.
2. add flour n salt into butter mixture using hand till all the ingredient are well
mix n form a dough.
3. wrap and rest the dough in the refrigerator for 15min or more.
4. shape the dough and bake in the oven [150'].

TART FILLING

4 sweet fresh pineapples
500 g granulated sugar[ikut ukuran masing2]
yellow colouring

Method
1. Grate pineapples and squeeze out juice using a muslin cloth or use the strainer to drain the juice, keep aside
2. Chop or blend pineapple meat until fine
3. Combine with sugar in a heavy-bottomed pot and cook over low heat until almost dry
4. Stir constantly until mixture is gluey and thick, the consistency of thick jam
5. If too dry, add abit of pineapple juice
6. Cool and store in refrigerator

SUJI BADAM


SUJI BADAM [Kak Intan]

Ingredients
* 1 kg flour
* 400g icing sugar
* 350g almond (finely ground)
* 1 tsp baking powder
* A pinch of salt
* Cooking oil (about 2 1/2 to 3 cups)

Method
* Put all except cooking oil in a bowl. Mix well.
* Add in cooking oil gradually until a dough is formed.
* Roll the dough with the rolling pin.
* Cut dough with cookie cutter of your choice.
* Bake in preheated oven at 150C for about 16 minutes.

STRAWBERRY COOKIES



ORANGE BAR COOKIES[Yochana's Delight]resepi asal.

130 gm. butter
90 gm. sugar
1 egg yolk
230 gm. plain flour
1/8 tsp. salt
30 gm. custard powder
1/2 tsp. baking powder
30 gm. ground almonds
1 tsp. orange emulco/paste[sy ganti strawberry emulco]
a little orange colouring if the the colour is not dark enough[sy ganti pink colouring]

For decoration: some melted chocolate and Hundred Thousands

Method:

(1) Cream butter, sugar and salt till creamy.
(2) Add in egg yolk , orange emulco and orange colouring.
(3) Add in plain flour, custard powder, ground almonds and baking powder. Mix into a dough.
(4) Roll out the dough and then use a cookie cutter to cut out the cookies. Lay onto a tray and bake at 150C for about 20 mins or till crispy.
(5) When cookies are cooled, melt some chocolate , pipe out lines and then sprinkle with Hundred Thousands.

AYAM MASAK MERAH BEREMPAH [Rossya]


1 ekor ayam (potong dan dibersihkan dan goreng setengah masak)
3 biji bawang besar dipotong bulat
3 biji cengkih
4 biji buah pelaga
3cm kulit kayu manis
200g tomato puree (blh guna sos tomato)
4 biji tomato (dipotong enam)
sedikit kacang peas dan bawang goreng
2 batang serai dititik
3 cm lengkuas dititk
2 tangkai daun ketumbar (digunting kasar)
garam dan gula secukup rasa

Bahan kisar:
10 batang lada kering
4 biji bawang putih
3cm halia
2 sudu makan ketumbar
1 sudu makan jintan manis

Panaskan minyak. tumis bawang besar, kayu manis, cengkih, pelaga , serai, lengkuas dan bahan kisar hingga wangi. Masukkan 1 cawan air, ayam goreng, tomato puree, garam dan gula. Masak hingga ia pekat. Bila pekat, taburkan buah tomato, kacang peas , bawang goreng dan daun ketumbar.

Tutup periuk dan matikan api. Sesuai dimakan dengan roti, roti prata dan nasi.

HYDREBAD RICE PILAU


HYDERABAD RICE PILAU [NoorMasri ]


Bahan-bahan:

3 cawan beras
3 sudu besar minyak masak
4 cawan stok ayam *
3 ulas bawang merah } mayang
1 ulas bawang putih } tumbuk halus
1 inci halia } tumbuk halus
1 sudu kecil saffron
1/2 biji kulit oren (jgn amik sampai bahagian putih nanti pahit)
1/4 cawan kismis
1 sudu besar lemon jus
garam secukup rasa

Hiasan:- jika suka

Sedikit kepingan badam } panggang terlebih dahulu
sedikit daun pudina } cincang
sket daun ketumbar } hiris

Cara membuat:

Panaskan minyak, tumiskan bawang merah hingga keperangan kemudian masukkan halia dan bawang putih
Kacau hingga agak garing
Masukkan beras kacau sekejap biar sekata
Masukkan stok ayam, saffron, garam dan kulit oren
Bila mendidih dan hampir kering masukkan kismis dan jus lemon
Biarkan nasi masak spt biasa
Hiaskan jika suka

PARPU TELUR


Parpu Telur (INAI)

1/4 cawan kacang dhall (rendam 2-3jam)
1/2 s/t halia+bwg merah+bwg putih mesin
3 biji kentang
2 biji telur
sedikit santan
garam
serbuk kunyit
1 cube ikan bilis(sy tambah..klu ltk ni kurangkan garam)

Utk tumis darat:-(Bahan B)
Minyak
1/2 biji bawang besar (hiris nipis)
2 helai daun kari
1-2 tangkai cili kering (potong pendek)sy pkai cili hidup
1/4 st biji sawi
1/2 st jintan manis

Method:-
1. Rebus dhall hingga empuk. Add kentang dan rebus hingga kentang empuk.
2. Add halia bawang, serbuk kunyit, garam
3. Masukkan santan...dan pecah telur sebiji-sebiji..jgn kacau sangat. Biar telur masak dulu. Kacau sikit2 je.Tutup api
4. Dalam kuali lain panaskan minyak dan tumis semua bahan B hingga wangi.
5. Curah semua bahan B dlm kuah tadi dan sedia dihidang..

PUDDING MARBLE





Puding Belang (BBatriesya)

10 gm serbuk agar-agar
200 gm gula castor
2 1/2 cawan air
1 tin susu cair
3 sudu besar butter
3 sudu besar tepung jagung(sy pakai tepung custard)
2 biji telur
1 sudu besar serbuk koko bancuh dengan air panas
Sedikit pewarna kuning

Cara

Masak agar2 dengan air dan gula hingga hancur.
Telur dipukul, campurkan dengan tepung jagung, susu cair dan pukul sebati.
Masukkan ke dalam adunan agar2 tadi
Masukkan butter dan biar mendidih. Tutup api dan bahagi dua.
Satu bahagian diletakkan warna kuning, dan satu lagi warna koko.
Cara melapis & membentuk terserah masing2.
Sejukkan dan hidangkan.

CHOCOLATE CHIPS COOKIES


BISKUT COKLAT CIPS RANGUP (HANIELIZA)

Bahan A
250 g butter
160 g gula halus
1 biji kuning telur
1 s/k esen vanilla

Bahan B [gaul rata]
230 g tepung gandum]
20 g serbuk koko ] ayakkan
100 g coklat cips
50 g white coklat cips [boleh gantikan dgn coklat rice]
50 g badam cincang [roasted]
50 g nestum

Cara
1. Gaulkan butter dan gula sehingga sebati.
2. Masukkan kuning telur dan esen vanila. Kacau rata.
3. Masukkan bahan B perlahan dan kacaukan dengan senduk kayu.
4. Sudukan adunan kecil2 [besar guli] dalam loyang.
5. Bakar dalam oven yg telah dipanaskan suhu 180'C selama 25 minit atau sehingga masak.
6. Sejukkan dan simpan dalam balang kedap udara.

CARROT CAKE

first time time makan carrot kek masa sy gi cameron dulu..sdp rupanya carrot kek ni..nari tekak rasa mcm nak mkn carrot kek..apalagi negok semua barang2 ada..projek pun mulalah...sy wat dlm cupcakes ...ni lah hasilnya...yg ni blum ltk cream cheese frosting .
yg ni setelah sy letakan cream cheese frosting...sy cuma pipekan zig zag atas kek...tak pandai decor..sbb tu wat cam tu je.


resepi carrot cake ni sy ambil kat ALLRECIPE

Carrot Cake III

INGREDIENTS
4 eggs
1 1/4 cups vegetable oil (sy pakai 1 cawan)
2 cups white sugar
2 teaspoons vanilla extract
2 cups all-purpose flour (sy pakai self raising flour-klu pakai ni jgn ltk baking powder)
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
3 cups grated carrots
1 cup chopped pecans (sy ganti dgn walnut panggang)

Cream cheese frosting(ni sy wat sendiri)
100gm cream cheese
60gm castor sugar
1tbs butter

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots. Fold in pecans. Pour into prepared pan.
Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
To Make Frosting: using a mixer..mix all till fluffy
